This is the weakest side of our knowledge about nutrition. We are often informed about what to eat but nobody informs us about how food is digested in our bodies. Eating diversified food is usually recommended. A model meal seems to be a sandwich overloaded with carbohydrates at a popular fast food restaurant. This is great evidence for our lack of knowledge on this subject. It is noteworthy that animals eat various food and usually they have no problems with digestion.

Each product we consume often needs a different enzyme and different duration of that enzyme action. Fruit and vegetable juices are digested the fastest – just within 15 to 20 minutes. To digest vegetable salads, our body needs about 30 to 40 minutes. Root vegetables are digested within 40-50 minutes. Starch vegetables are digested even longer – in as much as 60-90 minutes. Grains and nuts are digested after 2.5 or even 3 hours. Dairy products require at least 90 minutes for digestion, whereas cheese, especially hard cheese rich in fats and proteins, requires even 4-5 hours. Egg yolk is digested within 30 minutes, whereas the whole egg – within 45 minutes. We digest fish within about an hour and pork is digested after 4 or 5 hours.

Combining various products requiring different digestive enzymes in one meal creates serious problems for the whole digestive system. The food we consume is digested with great difficulty. Putrefaction processes occur, which cause fermentation.

Digestion of the food substance occurs gradually and each stage of this process requires a different enzyme. Each enzyme that comes into action can appropriately fulfil its task if its predecessor did what it was supposed to do. For instance, if the protein is not degraded by pepsin, the enzyme that degrades it into amino acids could not perform its task.

Sugar disorganises the digestion of various foods such as proteins, starch, fruit and vegetables. Alcohol precipitates pepsin and makes it impossible to digest any protein. This explains why digesting various foods is such a complicated process and requires a great deal of knowledge from the consumer of such foods. The concomitant consumption of improperly selected foods can cause severe diseases.

To make it easy for you, we present several rules of appropriate food combining. In order to digest it properly and effectively, it is best to eat a meal consisting of only one product. If not, respect the following rules of proper food combining:

  • Do not combine proteins with starchy food.
  • Do not combine starchy food with sour products.
  • Do not combine sour fruit with proteins.
  • Do not combine starchy food with sugars.
  • Do not combine proteins with sugars.
  • Avoid eating two different protein foods in one meal.
  • Do not combine melons with any other food. Eat them alone at the beginning of your meal or separately. They are digested very fast.
  • Do not combine milk with other products.
  • Remember that fats impede the flow of gastric juices and digestion of proteins. They are best absorbed with vegetables and fruit and not so well with starch and proteins.

Principles of good nutrition

  • Do not eat if you are not hungry, nervous, tired and in a hurry.
  • Do not eat until you are full. Always leave the table with a feeling of still being a little hungry in order to be active after the meal.
  • Do not drink while you are eating.
  • Do not drink too cold or too hot beverages.
  • Do not eat snacks between meals.
  • It is recommended to eat regularly in peace and a nice atmosphere. It is best to eat two or three times a day, always at the same time. Your body will quickly adapt.
  • Do not cook on electric ovens, in Teflon-coated aluminium pots, and do not use microwave ovens. Here we should consider the scientific research on food exposed to microwaves. Scientists indicate such phenomena as memory and concentration disorders, decrease in the level of intelligence, deterioration of digestion, growth of cancerous cells in the blood, increase in the level of free radicals, reduction of vitamins and change of nutrients. The destruction of enzymes contributes to the retention of food in the intestines, which may cause poisoning. Microwaves not only increase the temperature but also change the structure of the food. In turn, Teflon is able to penetrate the placenta and affect the baby’s health.
  • You should eat only fresh food and avoid processed products. The more processed they are, the worse they become. These are examples of processed foods: white flour, white sugar, white rice, white bread, biscuits, pasteurised milk, canned food and many industrial food products. You should also avoid genetically modified plants with toxic proteins (BT corn), etc.

As far as possible, avoid or reduce consumption of products that contain chemical additives, flavourings, preservatives, colorants, products from excessively fertilised crops, from regions with highly contaminated environment and from tropical or subtropical climate, unless you live in such a region.
